• Ingredients for 4 pers.
  • 2 kg of potatoes
  • 2 bunches of leeks
  • 4 red onions
  • 400 g camembert
  • 250 g cubed smoked bacon
  • 8 slices of Ganda ham
  • 1 clove of garlic
  • 2 shallots
  • thyme
  • rosemary
  • pepper
  • salt
  • nutmeg


  1. Boil the potatoes al dente and then fry on the grill together with the chopped shallot and garlic.
    Place this in a fireproof dish.
  2. Fry the bacon flour. finely chop the leek and the red onion into rings, fry, and deglaze with red wine vinegar.
    Divide this over the potatoes together
  3. Grill the Ganda ham briefly and place it on top of the dish along with pieces of camembert, thyme, and rosemary.
  4. Place the dish under the lid at a temperature of 200 ° C for 20 minutes.

As an extra, I have meanwhile baked a piece of candied pork belly with a lacquer sauce.
